I’m not going to apologize for being obsessed with curry these days. I think I’d make a birthday cake out of curry if I found the right recipe. Poor Zealand, his birthday is on Tuesday… Seriously, this is yummy and you can enjoy it all week long for lunch. The original recipe found at Taste of Home.
Curried Chicken Salad Sandwiches
2 cups cubed cooked chicken breast
3/4 cup chopped apple
3/4 cup dried cranberries
mayonnaise (non-fat plain yogurt)
1/2 cup chopped walnuts
1/2 cup chopped celery
2 3 teaspoons lemon juice
1 tablespoon chopped green onion
1 teaspoon curry powder
6 lettuce leaves
6 croissants, split
In a large bowl, combine the chicken, apple, cranberries, yogurt, celery, lemon juice, onion and curry powder. Place lettuce on croissants. Top with chicken salad mixture. Yield: 6 servings.
