Okay so let me tell you this- best soup on planet earth…esp if you like spicy. I understand with kids, spicy can’t always be in the mix. So if that’s the case, hold on the jalapeno seeds. I promise…this one is a winner either way.
- 3 Avocados
- 3-4 Chicken Breasts, cooked and shredded
- 1/3 Cup Cilantro
- 2 Cloves Garlic
- 1 Cup Green Onions
- 2 Jalapenos
- 2 Roma Tomatoes
- 4 (14.5 oz, I use the granules) cans of Chicken Broth
- 3 Tbl of Lime Juice
- Salt & Pepper
- 1 Tbl Olive Oil or Coconut Oil
- 3/4 Tsp Cumin
In a large pot, heat 1 tbl of olive oil over medium heat. Add green onions and jalepenos and saute until tender-about two minutes, then add garlic and saute for about 30 more seconds. Add Chicken broth, tomatoes, cumin, and season with salt and pepper to taste and add chicken. Bring mixture to boil over medium-high heat. Then reduce heat to medium, cover with lid and allow to cook, stirring occasionally. Stir in cilantro and lime juice. Add avocado to soup right before serving. Great to serve with cheddar cheese and chips as desired. Enjoy!
